Police said the woman suffered minor injuries and was taken to the hospital by ambulance. The driver of the car later pulled over and called 911 to report the incident.

Meatless Butcher Shop Is Planned For Minneapolis

Aubry Walch’s planned butcher shop is almost straight out of the 1950s: white-and-black tiles, paper hats, and a bounty of cheeses, sausages and other items.

There’s one caveat: All of the products will be clever concoctions of tofu, beans and vital wheat gluten.

Walch is co-founder, with her brother Kale, of The Herbivorous Butcher, which made its debut at the Minneapolis Farmers Market in June.

So far, it’s sold out every single weekend. The two are about to enter the wholesale market, as well. An assisted living facility has asked them to provide cuts of faux meat for residents on strict cholesterol-free, low-fat, or low-sodium diets.

Most of The Herbivorous Butcher’s customers are proud carnivores. “I would say more than half of our customers are not vegan or vegetarian.

“They’re just meat-reducers, for health reason or environmental reasons or just easeā€”not having to worry about whether something is fully cooked or not,” said Walch.

They are currently seeking investors and may make a foray into online crowd funding.

They estimate that they would need a minimum of $100,000 to $180,000 to get the shop going.
